Rosa Linda's my favorite Mexican Restaurant in Fresno, located at Bullard & West. Great food and ambience. The staff also takes pride in what they do. I only go to other Mexican restaurants now when I am out of Fresno.

Rosa Linda's. Rosa Linda's has a good selection of imported and domestic beers. They have wines by the glass, sangria and wine margaritas in addition to the usual soft drinks. The Albondigas soup consisted of ground beef meatballs in broth with vegetables. The chicken soup had shredded chicken meat in a vegetable broth, mixed with vegetables. The tortilla soup also had shredded chicken and vegetables, but it was a bit spicier and also had tortilla chips, melted cheese and was topped with guacamole and sour cream.

The Fajita Caesar Salad was served in a golden fried flour tortilla bowl with mixed lettuce, grilled bell peppers and onions. We shared Camarones Rancheros, which is shrimp in a spicy sauce, and the Fajitas Deluxe, which was served with a combination of beef, chicken and shrimp. The Selma Special consisted of two tacos deep fried and filled with steak, lettuce, cheese and guacamole. The Joviani Special is a large flour tortilla filled with beef, rice, grilled onions, Tapatio hot sauce and cheese.

The Tamales are made with fresh corn masa and guests have a choice of meat. The tamales are then covered with yummy sauce and a generous portion of gooey cheese. Rosa Linda is very proud of her tamales and pointed out that they are award-winning. We certainly didn't have any trouble understanding why. If you go here, you must try an order of them. Rosa Linda's ended our meal with coffee, Cheesecake and homemade Flan. Everyone seemed especially taken with the flan. They loved the rich carmel flavor and the sweetness of the dish.

For incredibly authentic Mexican food, you really must try Rosa Linda's Fine Mexican Cuisine. But don't forget to bring along your friends. Good food and good friends equals a great meal. Enjoy!
